"Are You Ready for the Ultimate Saturday Night Fish Fry Burger?"

I am so amazed on how much there is to see and do in the State of Florida. There are many great places to eat fresh foods and enjoy a drink or two. A Saturday afternoon is the perfect time for a nice cool drink and a stroll in one of the neighboring cities close.

The weather is getting nice again and I am always looking for some new inspiration for my palate and to share on The Tarnished Apple. It's always nice to see what's in our local area. It's fun to explore and see what's out there.

To let you know, The Tarnished Apple not just about making new recipes, and setting up the lighting and camera for the right shot. It's about supporting fresh local ingredients, farm to table foods.

It's also how the food is treated, where it's grown and how it's grown and of course the quality of food. I guess you could say it's the integrity of the food. From what I hear this local Market and Eatery are just that.

At The Tides Seafood Market and Eatery, there were some really delicious looking plates of seafood being served there and the menu looked great! They have everything from wines to local organic vegetables, eggs and dairy and a nice selection of fish to choose from. Presentation is always good in my books because your eyes eat first! it all looks so good. However, my mission for today was to be inspired and I was.

As much as I love to go out to eat, I love to cook at home too and tonight is

Saturday Night Fish fry Burger! So my choice of fish is Cod , A Fish Fry Burger! My mouth was watering already! I find when I cook/fry cod or haddock imparticular they seem to smell the most compared to some of the other fish out there. Fish is fish no matter what the house still smells.

I decided to fry the fish outside, less of a chance of those fishy lingering odors. Although I did see on the net that boiling cinnamon sticks, cloves. and star anise helps counteract the smells of fish. I haven't tried that yet. If anyone tries it ,feed back would be great.


Saturday Fish Fry Night

Prep time: 15 min.

Fry Time: 6-8 minutes or until the internal temp is 145 degrees F,

Serves: 4 people

Ingredients:

Beer batter

24 ounces of Cod- 6 ounces serves 4

1-12ounce bottle of light beer

1 1/2c. flour

salt

pepper

fresh dill

grated lemon

a deep fryer

light veg oil


Directions:

  • In a bowl add flour, 2 tbsp. chopped dill, 1 tsp. lemon zest whisk together the dry ingredients

  • pour the beer into the batter a little at a time until you get the right consistancy. (like pancake batter).

  • Cut your fish into equal portions

  • dry with a paper towel

  • salt and pepper both sides

  • cover with a dusting of flour on both sides

  • dip unto the beer batter until completely covered

  • in a hot deep fryer or pot of hot oil (temp. 350 for thicker pieces and up to 375 for thinner pieces)

  • Carefully pick the battered fish up with tongs and put part of the fish in the hot oil

  • wave the fish back and forth 2-3 times then allow the whole piece of fish in.

  • this is so you do not splash yourself, it also gives extra time so the fish does not stick to the bottom. Also the oil has to be hot and ready!

  • fry until golden brown and the internal temp should be 140-145 degrees. the fish should be nice and flaky.

  • take the fried fish and place on a paper towel to rest and for any extra oil to drain.

  • dress your burger accordingly, mine is tomato, lettuce and tartar sauce.


My Tartar sauce

1/2c. mayo

1/2c. Greek yogurt

1 small grated garlic clove

1 small diced shallot

2 tbsp. capers chopped

1 tbsp. chopped dill

2 tbsp. relish

2 tbsp. horseradish

1 tbsp. lemon juice

salt & pepper to taste

mix all the ingredients together well and use on your fish fry burger!
