Banana Cheesecake Bundles

Hubby and I had gone out to dinner to one of our favorite places on the beach and wanted to enjoy the views with a romantic dinner for two. Dessert is something we don't get too often, but in this case we decided to share and beautiful fried cheesecake dessert with ice cream. I could not get this out of my head and the taste was heavenly, let's just say.

This was a deep fried dessert with a light batter filled with Ricotta cheese & bananas. It was to die for.

Thought to my self; I have to come up with something like this but with The Tarnished Apple's own taste.




Prep time: 25 min.

Bake time: 15 min. or until lightly golden brown

Ingredients


Cream cheese filling

1/2c. mascarpone (softened)

1/2c. cream cheese(softened)

1/3c. granulated sugar

1 tsp. fresh whipping cream

1 tsp. vanilla extract

1 flat sheet lined with wax paper

1 small cookie scoop


1 package of Phyllo sheets

1 1/2 sticks of melted butter with a brush

1-2 bananas (sliced)

1/2c. ground walnuts

2 tbsp. brown sugar

1/4c. granulated sugar (sprinkling)

1 quart of whipping cream

caramel sauce(homemade or store bought is fine)



Directions:

We will start with the cream cheese filling first.

  • In a mixing bowl add both cream cheeses( softened & room temp).

  • add the granulated sugar, whipping cream and vanilla extract.

  • whip together until creamy and incorporated well. whipped cream is whipped!

  • On a wax paper lined sheet tray scoop cream cheese balls onto the wax paper.

  • makes around 8

  • pop into the freezer for 20 minutes until firm.

While the cream cheese balls are in the freezer, we can get started on the phyllo pastry.

  • You will need a sheet tray with wax or parchment paper, then you can lay out the phyllo and cover with slightly damp towel.

  • The phyllo can be fussy to work with and does tend to break and dry out quickly so handle with care. that's why we cover it with a slightly damp towel.

  • Make sure you have the butter melted in a small bowl or cup with a pastry brush.

  • on a clean layer of wax paper lay down the parchment sheet and brush with the melted butter.

  • sprinkle with a dusting of granulated sugar

  • add another layer of phyllo, butter and sugar

  • 2 more times until you have 4 sheets.

  • In a small bowl add 2 tbsp. brown sugar with finely chopped walnuts just mix together.

  • Add a good sprinkling of the walnuts on the last layer of phyllo.

  • cut down the middle of the phyllo lengthwise so you have 2 long strips of phyllo.

  • add small ball of cream cheese with a sliced banana

  • Gently lift pastry corner with filling and fold tightly diagonally to create a triangle (take care not to tear pastry). Continue folding, retaining triangle shape.

  • continue folding the triangle until you have used the phyllo strip up. brush with butter sprinkle with walnuts & brown sugar

  • repeat again with the phyllo sheets until filling is used up. (do not over stuff).

  • lay onto a sheet tray at 350 degrees F. for 10-15 minutes or until the pastry is crispy and golden brown in color.

  • take out and allow to cool.

  • serve with caramel sauce over top with a little fresh whipping cream on the side.

  • Fabulous!! It is sweet, lightly crunchy and taste amazing.
