The Tarnished Apple's Beer Batter Fish & chips

Serves: 4 people

Prep time: 15 min.

Fry time: 5-8min.350-360 degrees F


Ingredients

6-8 ounces of cod or haddock fillets

2 tbsp. lemon pepper

1 tsp. salt

1 tbsp. honey

1 1/2 bottles of light beer

2c. A.P. Flour + 1c. flour

1 tsp. dry dill

Fresh dill for finishing touches

1 lemon cut into quarters

Deep fryer or veg oil in a good deep pot

Paper towels for blotting

4 large russet potatoes

1 medium sheet pan lined with paper towel


Directions:

  • In a large mixing bowl add 2cups of flour, dry dill, salt and lemon pepper.

  • Whisk together well.

  • Add 1 bottle of beer to the mixture first to see the consistency of the mixture, then add the other half until it is a nice pancake batter texture.

  • add the honey and mix together with a wooden spoon.(yes I always like a little of that honey flavor in my dishes)

  • cut the fish into portion size strips for serving pieces.

  • Roll the fish pieces into 1 cup of flour with salt and pepper added.

  • Have the fryer oil heated up to the temperature of 350 degrees.

  • Use a candy thermometer for keeping the temperature in check at 350-360 degrees F.

  • add the first 2 pieces of fish into the beer batter and fully cover

  • then allow a little extra to drip off before you add the battered fish into the hot oil slowly. (as to prevent splashing and burning yourself).

Continue on until all the fish has been fried. It is always important to make sure you keep a constant temperature with the hot oil in between the fish being fried. Dropping fish into the oil tends to cool the oil down. which can make for a greasy battered fish.

Should cook 5-7 minutes.

  • when the fish are finished frying, lay them onto your sheet pan with paper towel to blot of the access oil.

  • should have an amazing crunch to that fish!



French fries

4 large russet potatoes

  • Make sure they are washed and scrubbed clean.

  • cut them into the size fries that you want. It’s always good to soak them in cold water to help release some of the starches. Usually for at least 30 minutes or longer is good.

  • Make sure you dry them before putting them into the air fryer or hot oil.

  • Put them into the air fryer with a drizzle of olive oil and a sprinkling of salt and pepper with garlic salt.

  • Air fry them for 20 minutes until crispy. Serve them up on the side with the crispy fish.

I like to use russet potatoes, they are great for french-fries and for baked potatoes too! I also choose to use the air fryer over the fried but it’s your own choice. They are both good.

Of course you can’t have Fish & Chips without tartar sauce. So here is my recipe.


Tar Tar Sauce

1c. mayonnaise

1 tsp. horseradish

2 tbsp. finely diced shallots

2 tbsp. diced dill pickles

2 tbsp. chopped capers

1 small garlic clove grated

1 tbsp. fresh lemon juice

1 tsp. honey

1-2tbsp. chopped fresh dill

Cracked pepper to taste

Mix and serve with your fish&chips
