Ingredients:
1/2 pack of bacon finely chopped
1 jalapeno deseeded & finely diced
1/2c red pepper small diced
3 garlic cloves grated
1 small onion finely chopped
2 tsp. fresh thyme leaves
1tsp. paprika
1/2 tsp. onion powder
1 tsp. garlic salt
2 tbsp. honey
1/4c. finely chopped flat leaf parsley
1 tsp. cracked pepper
3 tbsp. flour
Liquids
1c. wheat or lager beer
2c. chicken stock
1c. half & half cream
2 tbsp. butter
1 tbsp. chicken stock base
Cheeses
2c. shredded Colby jack shredded
1c. sharp cheddar shredded
1/2c. white sharp cheddar shredded
1/4c. grated parmesan cheese
Directions:
In a large saucepan fry up all of the bacon until crisp. When the bacon is ready, spoon the bacon onto a paper towel to drain. Leave the rest of the bacon fat in the saucepan, you will need it for flavor. Split the bacon up into 2 bowls and save one for garnish.
To your hot pan add the chopped onions, garlic, red peppers, jalapeno peppers, pepper, garlic salt and onion powder.
There is alot of salt in the bacon, and chicken soup base ,so at the end of the recipe taste for salt. Add what you need.
Stir until halfway cooked down, then add the 3 tbsp. flour to the mixture and stir until the flour is cooked through with the veggies.
Add the beer and whisk the veggies and the flour until well combined, Then add the chicken stock and keep whisking until all blended.
Add the chicken stock base, honey, whisk together in the stock. cook for 10 minutes.
add the cheeses.
At this point I flip over to a wooden spoon. Stirring constantly over a medium heat until the cheeses are blended in.
Add the thyme & paprika in and stir them in well. Allow the soup to simmer on low-med heat for 10-15 minutes so all the flavors can dance together.
Add the cream in with the soup and stir well. I used a hand blender just to make sure the soup was smooth and silky, it really helps.
Add the butter into the soup. It will add a creamy texture and shine to the soup, not to mention flavor.
Then I stir in the bacon at the end so it can bring a little more extra bacon flavor. (there’s never enough bacon)! Add extra salt if needed.
When you serve the soup you can add croutons and a sprinkle of the bacon, fresh thyme or flat leaf parsley.
I did make my own croutons, easy peasy! The recipe is below:

You will need:
Day old French bread
garlic powder
onion powder
salt
pepper
grated Parmesan cheese
olive oil
Heat oven to 280 degrees.
Cut half the loaf of bread into cubes or thin slices.
Really, you only need to cut what you need for your servings. It does also help when the bread is dried out.
Lay the croutons out on a baking sheet and drizzle in olive oil .
sprinkle the spices and grated parmesan cheese over bothsides of the croutons.
make sure they are well covered in the oil.
pop them in the oven until crispy crunchie all the way through.
Then you are ready to add them to your soups or salads. Enjoy!!
Our Beer Roadtrip!!
I do love to use fresh local ingredients when I can, and we have a lot of local breweries near us. There are lots to choose from, so we do our research before finding the right place for our ingredients. We ended up heading to one of our favorite local areas, Dunedin, Florida and found our way to The Woodwright Brewing Company.- It is in the artisan part of Dunedin on Douglas Ave.
What makes this company so special is their story, When you hit their website read their story; it is really from the heart. Love to hear it when you find your passion, it is so important.
Upon entering the brewery we found it very warm and welcoming, a great way to hang out on the weekend with good company and a brew or two!
My husband and I went in to see if we could have a small sample or two! I wanted to find the right beer for my Beer & Cheddar soup. I realize I am not the only one that has made this soup before, but I like to do it right! The beer did not disappoint!! it was really good, especially since I am not a big beer drinker. We did find the staff very knowledgeable on their beer and I did end up going with the darker beer, (German Alt) Not before hubby having a brew himself!
We left with a great experience and a large brew in hand to take home and use for my soup. For the record, it turned out awesome! (the road trip and the soup).
