Ingredients
1/2c. softened mascarpone
1/2 package of cream cheese
1/2c. fresh whipping cream
1/4 cup of sugar
1 zest of a lemon
2 tbsp. lemon juice
2 cups of your favorite berries
hand full of granola
your favorite jam to match the berries you are using for this recipe.
Directions:
Whip the cream cheese& mascarpone until softened
add 1/4c. granulated sugar with the whipping cream and whisk until fluffy.
while the cream cheese mixture is whisking add lemon zest and juice.
in a bowl add your berries. (I used blackberries & raspberries). Sprinkle with a little sugar add a touch of lemon juice then lightly stir.
In a pretty parfait glass; pipe or spoon in some of the cream cheese mixture,
top with berries
add a drizzle of jam then repeat.
break up some granola pieces and sprinkle over top of the breakfast parfait.
top with a little mint leaf and serve.

Yes it is simple, but elegance doesn't have to be complicated, neither does a light breakfast dessert. Oopse! did I say dessert! lol
What's wrong with dessert for breakfast anyways?
With some of this beautiful whipped filling and some extra berries. I had set aside some extra whipped cream cheese mixture earlier. I used it in some puffed pastry that I had in the freezer.

Directions:
cut the puff pastry sheet in 8 rectangles.
lightly make cut marks an inch around the inner edges of each pastry rectangle.
brush the edges with egg wash and a light dusting of granulated sugar
on a sheet tray, bake at 350 degrees F for 15-18 minutes until puffed up and golden brown.
Allow to cool down and take the center piece gently out of each puff pastry
Fill the center of the puffed pastry with some of the whipped cream cheese filling and top with berries and icing sugar.
Easy Peasy!!
