There are a lot of different components to this recipe, so making your caramel sauce ahead of time is good.

French Toast
Prep Time: 10 min.
Cook Time: 10-12 min.
Serves: 2
Ingredients:
3 eggs
1/4c. coconut milk
1 tbsp. powdered sugar
1 tsp. vanilla extract
2 tbsp. butter
2 tbsp. olive oil
Challah bread
Whisk the eggs, milk, vanilla and sugar everything together in a large bowl. Make sure all the lumps are out.
Cut the Challah bread into 2, 1 1/2 to2 inch slices.
I like my slices thick and rustic, but you can slice it however you like.
In a hot frypan on med-hi heat add the butter and the olive oil or canola oil if you prefer.
Soak the slices of bread in the egg mixture making sure each side is soaked through, but not soggy.
making sure the extra egg mixture has drained off of each piece of the bread before adding each piece to the pan.
Cook until golden brown, then flip and finish cooking off the rest of the French toast.
Set aside or place in the oven to keep warm. Until you can put the dish all together!
Brule Bananas
Ingredients:
3 bananas
1 cup sugar
Large flat dish
Brule torch
Pour 1 cup of sugar to a large plate.
you need 3 (not too ripe) bananas. Slice the ends off and cut length wise down the middle. Just like you would a banana split.
Carefully take off the skins without breaking the banana meat .
Then roll them into the sugar and place them on a plate.
You will need your Brule torch, just run your flame over the sugared bananas until they turn nice and golden brown, Make sure you do both sides.
. Set them aside.
Whip cream Mixture
1c. heavy cream
1/2c. mascarpone(room temp).
1 tbsp. icing sugar
1/2 tsp. vanilla bean extract or vanilla extract
You can use the regular vanilla extract, if you don’t have the paste. I like the subtle little hints of vanilla beans in the whip cream mixture.
Mix the whip cream with the mascarpone, vanilla bean extract and icing sugar together with your beater or stand mixer. There should be nice soft peaks Set aside.
Time to go to the plating for this decadent and beautiful dish!
Plate your French toast, then lay the Brule bananas over top.
Add a smothering of the whipped cream and a drizzle of that beautiful luscious caramel over top.
This is a great dish for you're Sunday brunches with the family. Oh and by the way, absolutely no calories here ;)
