Butternut Squash with Sausage & Sage

Time cook: 35 min.@ 375 degrees

Prep time: 8-10 min.

*4 slices per person.

A serving size is 1 cup per person.


Ingredients:

1 butternut squash

1 gala apple

2 sweet Italian sausages

1/4c. diced onion

1/2 tsp. garlic salt

1/2 tsp. cinnamon

fresh grated nutmeg

1/2 stick of butter

2 tbsp. maple syrup(have some extra for finishing touches)

fresh sage 6-8 leaves

S&P to taste

1 sheet pan

Directions:

  • pre heat oven to 350 degrees F

  • spray the sheet pan with non stick spray

  • cut 1 butternut squash in half and clean out the seeds

  • then turn the open side down on your cutting boards and cut into thick slices

  • sprinkle each side with salt, pepper cinnamon and a little nutmeg

  • cut a half a stick of butter into squares

  • drop the squares of butter onto the sheet pan of squash

  • Bake in the oven at 350 degrees for 35 minutes or until fork tender.(half way through remember to turn the wedges of squash&apple over).

While you are waiting on the squash:

  • in a hot skillet fry up 1/2 a diced white onion in a little olive oil

  • add 2 large links of mild Italian sausage meat.(remove the meat out of the casing).

  • add a little salt and pepper and garlic salt to taste.

  • when the sausage is almost fried up add 2 tbsp. of maple syrup and stir it into the sausage.

  • the sausage should take 8-10 minutes on medium-hi to cook.

  • then take the sausage off the stove and pour onto a paper towel to drain any access fat.

  • take the squash and apples out of the oven and plate

  • place the sausage meat as your next layer of flavor over the squash , along with the apples.

  • drizzle some maple syrup over top of the squash dish.

  • Then place the fried sage leaves over top of the squash peices.

Fried Sage leaves

  • 1 small skillet with just enough oil to cover the bottom.

  • you only want enough in the fry the sage leaves in.

  • Wait until the oil is hot then add the sage leaves.

  • they should crisp up within a minute .

  • drain them onto a paper towel to drain.

  • use them to top of the squash dish.


It's a beautiful earthy flavor and texture to add to a great fall dish!
