This was a soup I made from the leftovers in my fridge from the Christmas holidays. With so many leftovers a lot of the time they get waisted or thrown out.
It's amazing what a few carrots and sweet potatoes can do along with a few other ingredients.
Carrot Curry Soup
Prep time; 15 min.
cook time
serves 4 people(1c. per person)
2 tbsp. butter
2 tbsp. flour
1c. of roasted carrots
1c. roasted sweet potatoes
1 shredded gala apple
4 green onions,+ 1 to 2 for garnish
1/2 chopped sweet onion
2 tbsp. freshly grated ginger
2 tbsp. honey
3c. chicken or veggie stock
1/2c. water
1 can of coconut milk or 1/2c whole+1/2c. half n half
1 tbsp. curry powder
1/2 tsp. tumeric
1/2tsp. ground cumin
1/2 freshly squeezed orange
Topping
Greek yogurt
honey
sliced scallions
Directions
In a large soup pot, on med lo heat add butter
allow the butter to melt down
add the chopped up scallions and onion.
stir and sauté until lightly tender.
add to the pot; curry powder, grated fresh ginger ,cumin, tumeric and cracked pepper.
sauté the spices and veg,
add the flour and stir that into the mixture until the flour is cooked out.
add the already roasted carrots and sweet potatoes.(chopped)
(these were left from our holiday meal, and I must say roasting veggies first for soup gives them a very beautiful rustic sweet flavor).
add the grated apple, broth and water. stir well until the soup thickens.
add the soup to a blender and blend until smooth.
pour the soup back into the pot
add the honey for a little sweetness, and the dairy that you are using.
taste for salt and add what is needed.
add a squeeze of orange to the soup.
stir and simmer on med-lo
I let this soup cook a good 20-30 minutes on low stirring with a wooden spoon more than occasionally so the soup doesn't burn.
taste the soup see if there is any extra salt that may be needed.

Serve with Greek yogurt in the center of the soup with a garnish of sliced scallions and a drizzle of honey.
The yogurt has a cooling taste and goes great with the warm curry flavors of the soup. Such a comforting soup.
