Cook time: 1 hour
Prep time: 20 minutes
Serves: 4-6 servings( 1 cup per person)
Ingredients:
2 tbsp. olive oil
1 tbsp. butter
2 garlic, sliced
1/2c. white onion, diced
2 carrots diced
2 celery sliced
1c. diced ham
1 14.5 ounce of canned diced tomatoes
5c. chicken or veggie broth
1 tbsp. better than boullion roasted chicken or veggie
1 14.5 ounce can of white beans
2 tbsp. tomatoe paste
1 tbsp. honey
salt to taste, (because of the salt in the ham already contains)1 tsp. cracked pepper
1 tsp. paprika
3 handfuls of chopped kale or spinach
Directions
In your soup pot, on med-low:
add butter and olive oil .
when the oil has heated up add your diced onion, celery, carrots and garlic.
allow a few minutes for the veggies to render down until slightly softened.
add the diced ham.
stir and combine all the ingredients stirring well with a wooden spoon.
when veggies are softened, add 1 can of tomatoes and the white beans.
Stir in well
add 6 cups of stock and 1 tbsp. Better than Bouillon roasted chicken or vegetable ( https://www.betterthanbouillon.com/ )
adding tomato paste and honey.
stir well on medium high until the soup starts to bubble, then turn down to a lower heat.
add the kale to the soup.
add salt and pepper to taste and the paprika for that smoky flavor.
allow the soup to cook for an hour on low. Stirring occasionally.
The beans will naturally thicken up the soup because they are a starchy veggie.
I love to let the soup cook slow and low as long as it takes the longer the better I say.
But is usually ready in an hour.
I love these kind of soups on a cold rainy or snowy day! comfort food at it's best!!
