Although alot of us entertain through-out the year, fall and (dare I say) Christmas will soon be upon us. It's always a great time of the year to put on a spread! I love to entertain and I love to bring food to my favorite people.
In passing someone had mentioned to me about a charcuterie board of goodies for the season. I thought now would be a good time to come up with some bites for the seasons coming.
I do love to use fresh fruits in some of my hors d'oeuvres. We have figs in our local markets and grocery stores right now and I love the taste of them. I found some beautiful organic brown figs which are a beautiful brown and light green in color.
A fresh fig should be soft to the touch when gently squeezed. And the sweeter they are the riper they are. They are great of with cheese platters, and serve well with a whipped feta and goat cheese. Even a smoked gouda would be great!
With my prosciutto wrapped figs it is always better if your figs are ripe, so they have that sweet flavor of goodness that will stand out with the prosciutto.
Prosciutto wrapped figs with whipped feta & honey
Prep time: 5-8 minutes
Bake time: 5 min @ 350 Degrees
Serves: Served as little bites per person
it's usually 1-2 figs per person, but since we are serving this as little appetizers I would recommend 2-3 per person.
Ingredients 4 figs
4 slices of prosciutto
1/2c. softened cream cheese
1/2c. of your favorite feta
1 tbsp. honey
pepper
fresh thyme
*more honey for drizzling after.
Directions:
preheat oven to 350 degrees.
you will need a small sheet pan
cut the tip off of each fig, then cut into quarters.
take a piece of the prosciutto and cut in half length wise
wrap each fig quarter in the half piece of prosciutto and place onto a small sheet pan.
they do cook quickly in the oven so do not leave them.
you just want the fig softened and warmed through with the prosciutto, crispy.
take out of the oven to cool down and serve them onto a serving platter to cool down.
In a mixer add the cream cheese and the feta.(I like to use a vegan feta(Violife) https://violifefoods.com/us/ found in Whole Foods or Sprouts.
I like the taste and mouth feel of it and it is very creamy and fairly healthy!
whip the 2 cheeses together with a tbsp. of honey
blend until smooth then add to a pastry bag
squeeze the cheese mixture to the top of the Prosciutto wrapped figs and top with fresh leaves of thyme and a drizzle of honey.
don't forget the pepper, just a smidge.
no salt needed due to the salt in the prosciutto
They are really pretty to serve and delish!
