Favorite fall veggies

As you can tell my favorite time the year is Fall. I love the comfort dishes, the warmth of the season and the changing of the leaves(at least up north). Although Florida is not like up north, there are sure alot of beautiful fall veggies and a definite change into the Fall season here too. Yes there is lots of pumpkin spice too!

Check out the local markets and fresh food grocery stores like Sprouts and Whole Foods. What a great place to get inspiration.

These are some of the veggies in season here in Florida;

cabbage, okra, swiss chard, pumpkins, summer squash and lots of other legumes in the squash family. It's also great to walk through these stores or farmers markets and get a good view of the colors of the seasons too.

I picked up some Honeynut Squash, they are a miniature version of the regular butternut squash. Squash of any kind is a a fall favorite for me.

You can stuff them for sure, but sometimes simplicity is good. With the spices of the season, this simple dish can fill up the whole kitchen with fall smells as well as those beautiful taste sensations of the season .

Honey nut Squash with Apples

Prep time: 5-8 min .

Cook time: 25 minutes at 375 degrees F

1 squash should serve 2 people

1 serving size is 1/2 a squash


Ingredients:

2 honey nut squashes

4 tsp. of brown sugar

1/2 tsp. cinnamon

fresh grated nutmeg

1/2 tsp. garlic powder

1/2tsp. salt

2-3 cracks of pepper

2 gala apples sliced 1/2 inch thick

maple syrup for finishing touches

1 cast iron skillet

2 tbsp. butter

2 tbsp. olive oil


Directions:

  • Preheat oven to 375 degrees F

  • Cut each squash in half lengthwise and spoon out the seeds.

  • brush each squash with olive oil

  • add to the skillet the apple wedges

  • sprinkle the squash with cinnamon, nutmeg, garlic powder salt and pepper.

  • add 1 tbsp. of brown sugar onto the base of the squash then add a little bit of butter into each one.

  • sprinkle a little brown sugar cinnamon and nutmeg onto the apples with the spices

  • place into a hot over at 375 for 25 minutes.

This is a very simple, but rustic dish great for the upcoming seasons. With the warmth of the spices they just fill up your house with Fall.
