"How to Perfectly Grill Your Salad for a Delicious and Healthy Meal"

Ingredients

romaine lettuce leaves or spinach

1 large red pepper

1 large onion

1 large green pepper

1 cup of balsamic vinegar

Olive oil for drizzling

1 tablespoon of honey

4 large spoons. of goat cheese

S&P to taste


Directions;

Clean and dry the lettuce leaves. Cut each pepper into 8 pieces. Cut your onion into large slices about 1/2 inch thick. Drizzle your peppers and onion with olive oil and add a sprinkle of S&P. Put them on a hot grill or smoke.

Smoke or grill at a medium heat for 15-20 minutes.

While you are waiting on your veggies, use a medium size pot on low to medium heat. Add cup of balsamic vinegar with honey and whisk together. Allow vinegar to render down. You should see the balsamic vinegar thicken up. Say 10 minutes or so then put your reduced vinegar aside in a little bowl. You can also buy balsamic glaze in the grocery store.

Before your veggies are ready to take off the grill: Place the romaine lettuce on the bottom of the serving dish.

Add the charred peppers and onions over top. Place 3 nice tablespoons (or more) of goat cheese on your salad. Then drizzle your salad with the rendered balsamic vinegar. If your vinegar becomes too sticky, put it in the microwave for 20 seconds.

It can be whatever peppers you have at home, the brighter the color the better. I like the bright colors it adds to the plate. You could even add a little spice and add a jalapeno.

My thoughts...

This is when it’s one of those beautiful summer days and you know you’re going to be using the barbeque for something good. Whether it is steak, chicken or fish, this salad goes great.

You can use red onions or white, doesn’t matter. You can add mushrooms on the grill, even fresh pineapple chunks. The goat cheese is a great topper with the grilled flavor and the sweet balsamic reduction is delish!

I have also grilled the veggies and added them to a spinach salad with the goat cheese and reduced balsamic vinegar.

The goat cheese I buy is from a local sustainable farm, The Dancing Goat.
