Ingredients:
1 package of cream cheese
1/3 cup of “For Pedro’s Sake candied Jalapenos” (mango flavor)
1 small garlic clove
Pinch of salt and pepper
1 package of bacon cut in half
6-8 Jalapenos
1 piping bag or Ziploc bag
Toothpicks
Directions:
First and always use gloves the seeds can be spicy on your hands.
To start, make sure your cream cheese is at room temperature, and your bacon package is cut in half. Clean and dry your jalapenos. Then you’re ready to go!
After your jalapenos are cleaned, cut the caps off and roll the pepper with your hand on your cutting board. You will loosen the seeds up. Then with a small paring knife, carefully cut around the inside of the pith and clean the inside of the jalapeno the best you can.
In a mini blender add your cream cheese, garlic clove, candied jalapenos and S&P. Blend all of the ingredients together until creamy (remember to taste).
With a spatula put your cream cheese mixture into a piping bag or Ziploc and cut the tip off so the cream cheese mixture can flow through into the peppers. Start piping the cream cheese mixture into the jalapenos.
Use a half piece of bacon to wrap around each of the jalapeno pepper. Make sure you wrap from the middle to the top of the pepper with the bacon. Stick with a toothpick. When all of your peppers are ready, it's time to grill. Place them on a tinfoil try. It's for easy clean up and it’s easier to remove them all at once.
Grill until the bacon is done at a low-medium heat. By then the cheese should be oozing out of the top. If you have a smoker it’s even better to smoke them for an hour before. These peppers smoked are fabulous!!
Note: You can also do them in the oven on bake at 350 degrees for 25 minutes. You want to make sure the peppers soft and still holding their shape, and of course, the bacon must be cooked through.
Mini bell peppers can be used in place of the jalapenos, if you don’t like spicy. Although the jalapenos do lose some of the heat when they are baked or grilled.
