"How to Make the Perfect Honey Grilled Peaches with Mascarpone Cream"

Prep time: 15 min.

Bake time: 12-15 min. (350-degree oven)

Servings: 1 grilled peach per person with 1-2 large tbsp. of whipped topping.

Ingredients:

2 ripened peaches

3 tbsp. honey

2 tbsp. butter

3 tbsp. brown sugar

Pinch of cinnamon


Topping

1/4c mascarpone cheese

1/2c. fresh whipping cream

1 tsp. vanilla


Crumble

1/2c. dried coconut chips

1/3c. unsalted almonds

1/3c. almond flour

2 tbsp. sugar

2 tbsp. softened butter

1/4 tsp. almond extract


Directions:

  • turn the oven on for 350 degrees f.

  • make sure the peaches are cleaned & dried before using them.

  • cut the peaches in half and take out the pit. Set the peaches aside.

  • you will need a small pan for the honey butter mixture, which is 3 tbsp. honey, 2 tbsp. butter and 3 tbsp. brown sugar and a pinch of cinnamon.

  • turn on low –med heat until the pot starts to bubble up at the sides. Make sure you stir the mixture together then take off the heat. It should only take 3-5 minutes for this.

  • you will need your grill pan sprayed with non-stick spray then placed on a med-hi heat (stove top)

  • dip the peach halves in the melted honey-butter mixture, then place them in a hot grill pan, skin side up and honey coated side to the grill top.

(You just want the skillet nice and hot for the peaches to start cooking).

  • then, place in the oven for 12 minutes at 350 degrees or bake until peach flesh is soft and tender.

  • take them out of the oven and place with the skin side down on your plate.

While you are allowing the peaches to cool, quickly mix the crumble together.

  • In a food chopper at the coconut chips, almonds, almond flour, butter and sugar until they turn into a crumbly mixture.

  • add the crumbs to a small fry pan on med-low heat and cook the crumbs through until the mixture is just lightly toasted.


Whipped topping

  • to a small bowl add the softened mascarpone and vanilla extract, whip until smooth.

  • slowly add the fresh whipping cream and continue beating until soft peaks are formed.

Time to finish plating!

  • add some of your freshly whipped cream to the top of the cooled peaches with a sprinkling of the crumble mixture over top.

Adding some honey over top would be fabulous at this point!

Baking the fruit in the oven on a grill pan is great, but on the grill outside is even better when having company and sharing food with the people you love!


Serving this with vanilla ice cream even just some Greek yogurt would be great too!
