Ingredients:
2 cup of oyster mushrooms(torn into large shreds)
1cup of baby tomatoes halved
pinch of salt
cracked pepper
nice crust bread
1 clove of grated garlic
vegan-feta cheese
3 spriggs of fresh thyme
1 tbsp. olive oil
1 tbsp. butter
Directions:
Take the oyster mushrooms and make sure they are brushed clean of any dirt. Tear them into large shreds and set aside.
In a frypan on med-low heat add olive oil and butter, when the butter is melted add the oyster mushrooms baby tomatoes halved and grated garlic to the pan. Add 1/2 tsp. of fresh thyme leaves
the mushrooms should only take 5-10 minutes to saute them. Saute until the mushrooms are lightly browned. Add salt and cracked pepper to taste with some spriggs of fresh thyme.
Cut 4 sliced of bread brush with olive oil and grill until toasty.
Lay your toasted bread on the plate and top with the mushrooms and tomatoes, then add chunks of vegan feta or your choice of a creamy cheese is fine too.
serve with a light salad. This makes for a great light lunch. With this easy peasy recipe you can use your choice of mixed mushrooms, it all tastes deliscious!
