How to Make Irresistible Very Cherry Berry Squares for Your Next Gathering

Prep time: 20 minutes

bake time: 25 minutes for the squares and 15 minutes for the cherry mixture

Ingredients:

2c. fresh cherries(quartered & deseeded)chopped

1c. blueberries

1/3c. sugar

1/3c. blueberry or strawberry or cherry jam

1 tbsp. cornstarch

1/4c. water

1/4 tsp. almond extract


Directions:

  • In a small pot on medium-low heat add the cherries, blueberries and sugar. You can add more sugar (too your taste) if you wish. I thought with the jam and the 1/3c. sugar that would be sweet enough.

  • allow the fruit to cook down for for 8-10 min.

  • add the cornstarch with the 1/4c. of water(make into a slurry)

  • add into the cherry mixture.

  • add 1/3c. of jam into the mixture and stir until incorporated with a wooden spoon.

  • when the mixture thickens up set it aside.

  • add the almond extract at the very last minute



Butter Crust

1 1/2c. A.P. Flour

1/2c. crushed slivered almonds

1/2c. granulated sugar

1/2tsp. salt

1 stick of cold grated butter


  • Use a pastry dough cutter to work the butter into the flour ,almond mixture until blended and the dough sticks together.

  • Prepare a 9 inch by 9 inch with parchment paper. It makes it easy to take the squares out of pan after their cook time.

  • take part of the butter pastry and press it into a prepared square pan, (1/2 inch thick)

  • top with the cherry mixture

  • crumble the rest of the butter crust mixture topping on top of the cherries and bake for 25 minutes @350 degrees F.

  • allow the squares to cool.


Glaze

1c. icing sugar

2 tbsp. Mascapone

1-2 tbsp. of cream or half n half

  • whisk until it is a nice light ribbon like consistency.

  • pour the glaze into an icing bag and just cut the a small end of the tip and then drizzle diagonally over the cherry squares.



You can certainly use frozen berries for this recipe. I do like fresh berries and anything fresh.

This is great for mid morning coffee or afternoon tea. These squares are buttery sweet with that cherry berry filling. With that sweet flavor of the glaze to finish it off.
