How to Make the Ultimate Baked Brie with Caramelized Onions & Roasted Garlic

Yes, it will keep the vampires away for sure. But if you like garlic and onions, this is the way to go!!

This is a dish I usually make around the holidays for my family & friends. I have made this for years and it never gets old!

We first tried this appetizer at one of our favorite places to eat by the beach in Port Dover Ontario Canada.

Port Dover is an unincorporated community and former town located in Norfolk County, Ontario, Canada. It sits on the north shore of Lake Erie.

It is known for its Friday the 13th celebrations where the town attracts bikers from all over so they can raise money for Children s' foundations.

Baked Brie with Caramelized onions & baked garlic

Easily serves 4

Prep time: 10-12 min.

Cook time: 25 min.

Ingredients:

2 large onions

2 heads of garlic

few sprigs of fresh thyme

1/4c. red wine (merlow)

salt & pepper

1 tbsp. honey or br. sugar

olive oil

1 (350 grams) large brie cheese

1 French bread stick


Directions:

  • turn oven on at 350 degree F.

  • take the 2 heads of garlic and cut 1/2 inch off of the bottom

  • place with the open side up in a baking dish and drizzle the end that you cut with olive oil over top and a pinch of salt and pepper.

  • place into a hot 350 degree oven for 20-25 minutes until the garlic is soft and caramelized.

while the garlic is roasting....

  • Peel, cut in half and slice 2 large onions(thin slices)

  • add to a hot frying pan at medium -hi heat with 2 tbsp. olive oil and 2 tbsp. butter.

  • keep stirring until the onions start to render down and start caramelizing.

  • turn down to medium heat

  • add brown sugar, salt and pepper to taste and don't forget the red wine.(a nice earthy red wine)

  • adding a few sprigs of fresh thyme(you can take out the sprigs of thyme after the onions are finished cooking.

  • this process for the onions should take at least 15 minutes or until very caramelized.

  • Take off the burner.

while you are awaiting the onions and the baked garlic heads...

  • put your brie cheese in one of your favorite baking/serving dish.

  • Put into a hot oven for 12-15 minutes or until the top cheese starts to soften & melt.

(you may remove the wax off of the top of the cheese before you bake it or keep it on it's up to you).

  • For the French bread cut into thin slices and brush with olive oil and toast in the oven until just lightly toasty brown on top and turn over just to check the other side of the toast. it doesn't take long to toast so keep a close eye out for the toasts.

lets plate it!!

  • serve the baked Brie with a side of onions and the baked garlic heads with the open side up(of course).

  • plate up some of those toasted crostini's for dunking into the cheese.

  • you will need a serving knife for spreading for spreading the garlic onto the toast with a small fork of onions; then spoon on some of that melty cheese over top!!

Its kind of like eating wings, there is no neat way to do this!! but it goes taste great with some of your favorite red wine and good company!!
