"How to Transform Leftovers into a Delicious Breakfast Dish!"

Ever look through you're fridge before grocery day and wonder what to do with the leftovers? There were quite a few options in my fridge. Breakfast, It is always a my first choice and a great way to start the day! Eggs are a standout option, being incredibly versatile. You can enjoy them at any time of the day, not just for breakfast! Spinach is also a great ingredient to cook with eggs.

Ofcourse tomatoes are in my fridge and so is cheese. I remembered I had bought some beautiful heirloom tomatoes and thought they would be not only a delicious add on to eggs and spinach but pretty too! The bread, I did go and get some fresh crusty whole wheat bread. But you can use what ever bread you have in the pantry and put to good use.

Eggs Florentine benny it is!

Prep time: 12-15min.

cook time : 2 1/2 minutes for the eggs

serves:2

Ingredients:

1 small diced white onion

4 handfuls of spinach

1 small garlic thinly sliced

4 sliced tomatoes

2 slices of you're favorite bread

2 eggs

1 tbsp.

1/2 tsp. everything spice

pinch salt & pepper

fresh chopped parsley

few crumbles of feta cheese


Directions:

  • Fill a small saucepan with boiling water 3/4 the way full

  • add vinegar

  • bring to a boil on high.

  • In a 2 small bowls crack an egg in each one

  • with a spoon make a whirl pool in the saucepan of water.

  • drop in your eggs one at a time.

  • The vinegar helps the egg coagulate and helps the egg become nicely uniform.

  • I allow my eggs to cook about 2 1/2 minutes.

  • I can usually tell by the look and feel of the egg. It should have a nice cover of egg white over the yolk that's lightly firm but you can still see he yolk ready to burst at the seems! There should be no raw or jelly like texture the the egg.

  • Take your eggs out carefully with a slotted spoon and place aside on a paper towel

Sautéed Spinach

  • In a fry pan on medium heat add 2 tbsp. olive oil and a pad of butter

  • when the pan heats up and the butter is melted add your diced onion and sauté until lightly softened.

  • add sliced garlic and then the spinach to the pan

  • stir with a wooden spoon until the leaves are lightly wilted.

Let's Plate this!

  • On 2 pieces of toasted bread, add the spinach over the top of each

  • add a pinch of salt and pepper over the spinach

  • add two thin slices of tomatoes over top of the spinach on each slice of toast

  • pinch of salt and pepper over the tomatoes

  • top with your poached egg on each.

  • drizzle with the hollandaise over top of the toast

  • Top with chunks of feta cheese witch adds a nice salty

I added some parsley and a sprinkle of everything spice.

(hollandaise recipe below, it doesn't take long to make it.)



Hollandaise sauce

2 egg yolks

1/4c. melted butter

1 tsp. fresh lemon juice

pinch salt & pepper

1/2 tsp. Dijon mustard


Directions:

  • in a small mixer or you can use a jar with a hand mixer. I actually used a hand mixer with an frother. I found it worked exceptional!

  • add two egg yolks, mustard, lemon juice and a pinch of salt with cracked pepper.

  • with your hand mixer whip on high speed then slowly add the warmed butter

It is important that you pour the butter slowly into the eggs while you are whipping the hollandaise sauce. You don’t want the eggs to separate from the butter. The hollandaise should be whippy, light and delish!
