"How to make mom's buttery Belgium waffles from scratch."

Ingredients

¾ cup of granulated sugar

1 ¼ cup of softened butter

6 eggs (separated)

3 1/3 cup of all purpose flour

1 tablespoon of baking powder

1 tablespoon of vanilla extract

¼ teaspoon of almond extract

2 cups of milk

2 tablespoons of granulated sugar


Instructions

Make sure eggs and butter are at room temperature.

Separate your 6 eggs, put your egg whites and your egg yolks in separate bowls

Have your mixer ready to go!

Have your cooling rack close by for the waffles. Your waffles are going to be hot and will need a place to cool down.

In your mixer, combine the sugar and softened butter until creamed together. Whip the butter and sugar until light and fluffy 3-5 minutes. Add the egg yolks one at a time to make sure they are incorporated well. The mixture should be soft and creamy

Have your 2 cups of milk ready with your 3 1/3 cups of flour. You can slowly start to alternate the flour and milk until all gone and is well incorporated.

In another bowl add your 6 egg whites and start beating until they froth up. Then add 2 tablespoons of granulated sugar. Keep whipping until the egg whites start to form stiff peaks.

Slowly add the egg whites and fold in with spatula. or you can use the paddle on your mixer. with the lowest speed.

While folding in the whites, add your almond and vanilla extracts. *Just remember; A little bit of almond extract goes a long way.


Warning, if you start eating the batter by the spoonful your already addicted! There's no turning back.

Start making your waffles in your waffle iron. I like mine light brown no darker. My waffle iron makes 4'4 squares. Then set them aside on your cooling rack.


Finishing Touches


1 squeeze half a fresh lemon

1 tsp. lemon zest

2 cups of strawberries quartered

1c. blackberries

1c. blueberries

3 tablespoons of granulated sugar

Fresh whipping cream is preferred

Eden’s Nectar Summer honey (enough to drizzle)


2 cups of strawberries washed and cut into quarters. adding the other berries in with the strawberries.

Add the sugar. (Depending on how sweet you like them.)

add the lemon juice and zest to the berry mixture and give slight mix of the berries. I like to keep their shape and make sure the berries do not get too mushy. Allow them to macerate in the fridge.

½ cup of regular whipping cream with 1 teaspoon of vanilla extract. You can add 1 tablespoon of icing sugar to sweeten it if you want.

Place your waffle on your plate, top with a nice big spoonful of your berries then top with whip cream. Drizzle with Eden's Nectar Summer honey.


* you can use cool whip as an option, but there's nothing like fresh whipping cream.

These are a tradition in my husbands family. At our house, they usually come out on long weekends and the holidays.

My kids love Nutella on them, and my husband likes them toasted with butter. How do you like them?
