This is an older post. infact this is my very first post!
Going to the St. Petersburg Saturday Morning Market was a no brainer. I was like a kid in a candy store! I love to see the fresh, organic veggies which are always so beautifully laid out. There were freshly grown herbs all potted and ready for you to take home. I ended up leaving with sage, rosemary, and lavender. Yes, I said lavender! Hard to grow here in the South, but I had to give it a try! Back up north where I used to live, there was an abundance of lavender fields, where there were rows upon rows of lavender. The smell was amazing!
I soon stumbled across an organic vendor, who I ended up buying field greens from and a beautiful head of red leaf lettuce, along with some beautiful pea shoots and microgreens. What about those edible flowers?!
Checking out my basket of goodies and it filled up fast, it was overflowing with veggies, herbs and berries. Looks like we are going light & fresh for dinner tonight! I think there is going to be goat cheese involved with my elegant salad for tonight.
My Elegant Salad
Prep Time: 15 min.
Citrus & honey goat cheese
1/2 cup of goat cheese
2 table spoons fresh squeezed lemon juice
2 tablespoon of honey
pinch of salt
Incorporate the ingredients delicately together. I used fresh goat cheese from the farmer's Market. You can also use store bought already infused with citrus.
Then, put the mixture in a small bowl with plastic wrap and refrigerate.
Blackberry Balsamic Vinaigrette (2 people)
3 0z blackberries
1 teaspoon. of sugar or honey
1 tbsp. pomegranate syrup
1/2 squeeze of fresh lemon
1 tablespoon of of light olive oil
2 tablespoons of Balsamic Vinegar
A pinch of salt
1 turn of cracked pepper
Put 3 oz of berries in a small bowl with 1 tablespoon. of sugar. Use a fork and mash the berries with the sugar. You want to work the berries together with the sugar, but not crush them too much. Put them aside and allow them to macerate.
I roll a fresh lemon on the counter to get the juices working in the lemon. Squeeze 1/2 of a lemon in with the berries.
In a bigger bowl, add the berry mixture with the sugar and lemon juice together. add 1 tablespoons of light olive oil and 2 tablespoons of balsamic vinegar. Stir with a fork.

Plate your salad greens. Then add some whole blackberries and strawberries which you can cut up into quarters. Then add them to your salad. Top your salad with Life farms (flower power) microgreens or any microgreens of your choice.
Add a nice spoonful of your citrus & honey goat cheese on top. Then drizzle with your blackberry dressing.

My thoughts...
This salad is a light and bright looking. It is a great pairing with chicken or fish on the grill. I usually buy my ingredients fresh if I can. A lot of my greens are from one of our many farmers Markets here in Florida. Great spring mix with some microgreens and fresh strawberries and blackberries. The blackberry sauce is easy tasty and light. A touch of goat cheese is a nice topper with the dressing. Makes the whole thing look elegant.
