My Summer Strawberry salad

Had some friends over for a summer barbeque and I know everyone likes to eat light, so there's nothing like a summer salad with lots of bright colors and fresh fruits of the season.


Summer Strawberry Salad

Prep time: 15 min.

Serves : 4 or more people

Ingredients:

1 quart strawberries

1 quart of blueberries

1/2 red or sweet onion

1 package of spring mix

1 package of baby spinach

1/2c. feta broken into chunks

1 red pepper sliced

1 yellow pepper sliced

1/2 cucumber peeled and sliced

1/2c. toasted pecans

  • make sure your berries and veggies are cleaned.

  • In a large salad bowl or plate add spring mix and baby spinach

  • add 1/2 red onion thinly sliced

  • add strawberries that have been washed and quartered then the blueberries.

  • I like to layer my salad decoratively , so you can see the bright colors of the season.

  • Continue with the peppers and cucumbers

  • break the feta cheese into nice chunks to add over top then sprinkle with the pecans.

  • Just a suggestion, toasting the pecans first are always good. It adds a nice toasty crunch to the salad.

  • For this salad there is always room for more fruit!!


Balsamic vinaigrette

1/3c. balsamic vinegar

1 tsp. Dijon mustard

1 small grated garlic clove

1 tsp. Worscestershire sauce

1 tbsp. honey

1/3c. olive oil

pinch of salt and pepper

Add these ingredients to a jar with a lid and shake well.

Drizzle the Balsamic Vinaigrette just before serving.


I would also recommend really nice poppy seed dressing for this salad if you are not crazy about the balsamic dressing.
