Oatmeal cookies
Prep time:15 min.
Cook Time: 350 at 10 minutes per batch
Before you begin this recipe make sure all of the dairy ingredients are room temperature. Turn on your stove at 350 degrees F. Then with prepared cookie sheets you are ready to go! You can line them with parchment paper or cooking spray.

Ingredients:
1 1/4c. of A.P. flour
3/4 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. of salt
1/2 Tsp. cinnamon
1/2 Tsp. nutmeg
3 cups of old fashioned oats
Whisk together the dry ingredients.
2 sticks of butter
1 1/2c. of light brown sugar
1/4c. granulated sugar
2 large eggs
2 tsp. vanilla
Beat the granulated sugar, brown sugar and butter together until fluffy. Add the eggs and vanilla extract in with the butter and sugars and beat until creamy. Add the dry ingredients into the wet and mix until all ingredients are well incorporated together.
Drop by spoons or a small level cookie scoop, then tap the top of the cookie dough down with wet hands try to keep the cookies small in size. Do not place them too close together. You want them to have room to spread, and not overlap.
Place them in a 350 degree oven for 10 minutes per batch or until slightly browned sound the edges and top of the cookie.
You will be making sandwiches out of them, they should come out to around 3.5 inches across or close to it. You want them to be small cookies because they will have alot of filling in them.
Allow them to completely cool on a cookie rack then twin the cookies up in pairs. As matched in size as possible.

Step 2
Apple filling
Prep Time: 10min.
Cook time: 10-15 min. on medium heat
Ingredients:
2 green apples diced
3/4c. brown sugar
Pinch of salt
1/2 tsp. cinnamon
A hint of nutmeg
1/2 stick of butter
On a medium heat add your butter to a hot sauté pan. Allow it melt then add the diced apples, brown sugar and spices.
Stir the apples until soft and translucent.
The butter and brown sugar have combined together nicely into a soft caramel like texture.
Put them aside into a small bowl to cool.

Cinnamon Buttercream icing
Prep Time: 10 minutes
1/2 tsp. cinnamon
2c. of icing sugar
1/2 stick of softened butter
3 tbsp. of cream
Whip the butter for 5-8minutes until it turns into this beautiful whipped light color of butter.
add cinnamon, icing sugar and cream.
keep whipping.
Until it comes out light and airey!
Step 4
It’s time to put it together!
Take your oatmeal cookie and pipe around the edge of the cookie, leaving the center free for a half a spoonful of apple filling. Then top with the other oatmeal cookie and Voila!!
These sweet cookie sandwiches have a taste of fall flavors in them with the cinnamon and the caramel apple filling they are delish. I keep them in the fridge if I am not using them. Then allow them to sit at room temperature before serving. So they an get soft and umptious.
