Cook Time: 25-30 minutes
Ingredients:
2 medium white onions
2 tbsp. olive oil
1/2c. prunes
1/4 tsp. salt
1/2 tsp. pepper
2 tbsp. honey or brown sugar
1 tbsp. fresh thyme
1 minced garlic clove
Directions: In a saucepan on medium-hi heat, add the olive oil into the pan. When the oil has heated up, add the chopped onions, chopped prunes and diced garlic clove to the pan. Incorporate the ingredients together allowing them to cook down until you start to see the colors turn darker. Add the honey, salt and pepper. Allow the onion mixture to cook down until it is a nice rich brown color. I did also add a splash of water to help the rendering process. When the onion jam is ready, you will see a nice thick texture.
Note: You can replace the prunes with figs or dates which would be a natural sweet taste and would blend well with the onion jam.
We were looking for an alternative to dress up meat and this one is a good choice, (that's if you like onions). There are many different varieties of onion jam, I chose this one, because this had more natural sugars in it with the fruit, of course. The only extra sugar I added was honey. You can replace that with brown sugar or maple syrup. I do love the touch of fresh thyme. This is great to pair with a beautiful cheese like goat, camembert, brie or fontina. It serves up wonderful on a beef burger with sauté mushrooms smothered over a soft cheese and of course a glass of the red!!
