How to Make the Ultimate Peach-Cobbler Muffins with Honey-Butter Drizzle

makes 8-12


Dry ingredients

1 1/2c. A.P. flour

2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. cinnamon + a little for sprinkling later

1 egg

4 tbsp. (room temp butter)

3/4c. granulated sugar

1c. peaches (small dice) or (strained peaches from peach sweet tea recipe)


Directions:

  • Preheat oven to 425 degrees.

  • Prepare muffin tins with non-stick spray and your favorite cupcake liners.

  • Sift the dry ingredients into a medium bowl.

  • In another mixing bowl add the sugar, butter, vanilla extract and egg.

  • Beat until the batter has a nice light, bright yellow color.

  • To the wet mixture, add the peaches and stir in by hand with a spatula.

  • continue to add the dry ingredients to the wet and combine everything together.

  • Scoop the batter into your cupcake liners with an ice cream scoop.

  • The next step is to add the crumble topping:

Crumble Topping

3/4c. flour

1/4c. sugar

3 tbsp. butter


Directions:

  • In a medium bowl add flour, sugar and softened butter and mix together with your hands until the mixture resembles a crumbly mixture.

  • Top the muffins with lots of the crumble mixture.

  • Pop into the oven for 5 minutes on 425 degrees, then turn the stove down to 350 degrees for 15-20 minutes.

  • For readiness you can give the center of the muffin a light touch with the end of a wooden spoon until the center of the muffin bounces back. You can also do the toothpick test, which is when you insert the toothpick in the middle of the muffin to see if it comes out clean.

They should be ready so take them out of the oven and allow the muffins to cool while you are making the honey glazed peaches.


Honey-Glazed peach slices

1/2 peach (fairly firm) sliced thinly

3 tbsp. honey

2 tbsp. butter

1/2 tsp. cinnamon


Directions:

  • In a small to medium saucepan melt 2 tbsp. of butter at med-low heat.

  • Add 3 good tbsp. of honey into the pan with the butter with a small sprinkling of cinnamon.

  • When the mixture is combined together and heated through add your sliced peaches to the mixture. Make sure they are spaced apart and not to close together in the pan.

  • You just want the peaches to be, not quite translucent then flip each one over. It should be less than a minute on each side. Then carefully take the peaches out one at a time and place a glazed peach on each muffin top.

Add a drizzle of the leftover glaze over the peaches and crumble, the a little pinch of cinnamon over top.
