"Unleashing the Tropical Fun: Pina Colada Jell-O Shots"

Prep time: 15min

Cool time: up to 4 hours


Ingredients:

1 pineapple Jell-O 3oz box

1 cup of boiling water

1/2 cup of coconut rum

1/2 cup of pineapple juice

1/2 cup of heavy cream

1 teaspoon of coconut extract

1/2 cup of toasted sweetened coconut

1 tablespoon of icing sugar

2-3 slices of real pineapple cored with skin left on

Mini disposable shot glass cups

Directions:

In a medium bowl, start by adding 1 cup of boiling water to your Jell O powder and stir until the powder is dissolved, add 1/2 cup of pineapple juice. Allow the mixture to cool down a little, then add 1/2 cup of coconut rum and stir the ingredients together well. Set the mini cups out on a tray, and start pouring the Jell o into the mini cups. (If you use a measuring cup with a pouring spout it will make it easier to pour the Jell o into the glasses). Chill up to 4 hours or until the Jell o is set.

In the mean-time you have lots of time to work on your toppings. Start by cutting the top off of your pineapple. Then cut 3 slices of pineapple 1/4 of an inch thick, with core out and skin on. Cut the pineapple pieces into little pie shape wedges. With a pair of scissors or a knife cut the tip of the pineapple length ways down the middle, enough so you can slip it on the corner of the Jell-o shooter set them aside until you’re ready to add the finishing touches to the shooters.

In a fry pan add your shredded sweetened coconut on low heat. Use a wooden spoon to stir the coconut about so the it doesn’t burn. Once the pan is hot it should only take a few minutes to toast the coconut.

Whip your heavy cream up until fluffy with 1 teaspoon of coconut extract and 1 tablespoon of icing sugar.

Last but not least, top your Jell-o shooter cups with whipped cream, a sprinkling of toasted coconut then a wedge of pineapple on the side of the cup.

Note: the whipped cream will hold a lot better than the whip cream in a can. You can decorate the cups up to 2 hours ahead of time before your party.


For all those people that bring Jell o shots to a party, do a little something extra that will grab their attention to the glass. Make it fun!
