Plum jam

makes: 6 jam jars


Ingredients:

2 lbs. of your favorite plumbs

1 quart of black berries

2 lemons( juice&zest)

4c. white sugar

1/4c. water

6 jam jars

Directions:

  • In a large pot, add water 1/2 of the way to the top and bring to a boil then add your jam jars and lids

  • have a towel set aside to the back of your counter where you can set up your jam jars.

  • have a set of tongs ready with long handles, to help you remove the hot jars from the boiling water.

Jam

  • Cut up your plums in halves or quarters and take the pits out.

  • add the cut up plumbs to the saucepan

  • add the black berries in with the plums

  • add water and white sugar.

  • You will need a zest of 2 lemons and the juice of 2 lemons.

  • add both to the fruit

  • make sure you have your heat at med-hi and stay close by the saucepan.

  • stirring occasionally, until the fruit really starts to render down. (20 min. or so)

  • you may turn down the heat to medium.

  • when the fruit has softened

  • take the pan off the heat.

  • with your hand blender, blend all the fruit up.

  • with a heat proof bowl in the sink and a strainer over the bowl,

  • strain out the jam mixture.

  • just making sure there are no seeds and skin in the jam

  • when the jam is smooth add it back to the saucepan on low.

  • set up your jam jars on your towel and pour the plum jam into the jars.

  • do not over fill them, just fill them to the bottom of the lip at the top of the jar. leaving at least 1 inch at the top of the jar.

  • put on the lids but do not tighten them

  • wait for the pop!! that's what you want to hear with those lids on the jars.

  • allow to cool then put in the refrigerator.

As you notice in this recipe,

I try to use natural pectin like lemons, you can even use granny smith apples in some jam recipes in stead of the packaged stuff.

Some natural pectin are citrus peels, in-fact the white or pith part of the peel have lots of pectin.

extra sugar is also good for thickening naturally.

great uses for this jam: use with whipped egg whites for meringues

ice cream topping

add to fresh whipping cream for a nice dessert

so many different things to do with this beautiful jam.
