Ingredients
1 quart of brussel sprouts
1/2 cup of dried cherries
1/2 cup of blueberries
1/2 cup of walnuts
Dressing
1/4 cup of olive oil
1/2 lemon
1/2 orange
2 tablespoons of honey
1 tablespoon of Dijon mustard
Pinch of S&P
Directions:
Cut the bottom of the trunk off the sprouts and the outer leaves, then clean them. Finely slice each sprout and add it to your bowl with your blueberries and dried cherries. Toast your walnuts so they have a nice crunch and a toasty flavor. Then rough chop your walnuts, and add them to the salad. Give the salad a toss.
Dressing
Add the olive oil to a bowl, then squeeze your half a lemon and half an orange. Add honey and Dijon mustard with Salt and cracked pepper to taste. Whisk it up. So the honey is well combined in the dressing. Make sure you taste it to see if you need to add a little more S&P.
I wanted to see how good this salad really was, as I am the only one in my family who loves sprouts. My husband will not go near them. So when he tried a bite of the salad, I was pleasantly surprised!

Thoughts..
This salad is really healthy and I used farm fresh local ingredients. My honey was local raw honey from Eden’s Nectar. The people are so nice each time I have bought honey from them. Eden's Nectar has a beautiful website as well, so be sure to check it out!
I purchased the dried cherries from Fruit2nuts, another vendor at the market. They have a variety of custom trail mixes. Great add-ons for a salad and snackin! It all looked really good.
Just some fun facts about brussel sprouts! The great thing about this salad is the health factor. The sprouts aid in digestion, boosts brain function and lowers cholesterol levels. It also lowers your chances of getting a cold, and maintains a healthy heart.
The walnuts help control diabetes, improves bone health, and is good for your skin. It can help regulate sleep too. I’m all in!! Great if you have a craving for something with a crunch and you don’t want to snack out on junk. It’s a better alternative for sure. This salad is a keeper for my family. Like most salads, it is very easy to put together for a quick family meal.
