Grilled Florida Pink Shrimp
Ingredients:
1 1lb Medium peeled & deveined raw shrimp
1/4 teaspoon of Salt
1/2 tsp of cracked pepper
1/2 tsp of Garlic salt
1/2 tsp. Slap ya mama Seasoning
1/2 tsp. Chili-lime seasoning
Olive oil
Directions:
It’s always nice, when you go to your butcher to get shrimp, they are usually peeled and deveined. If not just ask, I am sure they will do it for you. Then the prep time is quicker for you to prepare the shrimp. Make sure the shrimp is rinsed clean then dried them off with a paper towel. The spices will stick to them nicely. In a small bowl add the cleaned shrimp,the olive oil and spices then incorperate all the seasonings on the shrimp. Make sure the shrimp is well covered . Allow the shrimp and spices to sit and marry.
I put the shrimps on a tin foil tray and popped them on our grill (medium heat) for 6-8 minutes or just until they turned pink. They should be nicely pink and plump. If you over cook them they will become rubbery.
You can also sauté them in a pan on medium heat with some melted butter until they turn pink on each side.
When they are ready, put them aside for your wrap.
Shrimp Fiesta Wrap
Ingredients:
4 nice pieces of romaine lettuce
3 cooked Medium shrimp, per wrap (Florida Pink Shrimp)
2-3 spoons of my cilantro lime dressing (per wrap)
Queso Fresco cheese or feta cheese (per wrap)
2 -3 tablespoons of My Mango Pico de Gallo (per wrap)
2-3 slices of avocado(per wrap)

Make sure you clean the lettuce & dry each piece well. Cut off the stem part about 1 inch off.
Add 3 slices of avocado on your lettuce wrap. Line 3 of your cooked shrimp down the middle of the wrap. Add 2-3 spoonful of the mango Pico de Gallo. Then top it with your cilantro lime dressing. Crumble up some of that great cheese and add a sprig of cilantro and some beautiful micro greens! Scrumptious!
