The Perfect Fall Salad: Warm Pear and Radicchio salad

Prep time: 25 min.

Cook time:60 min.

Serves: 4 people

Ingredients:

2 radicchios

3 bosc pears

greyer cheese

microgreens(rainbow mix)

1/3c. whole pecans

1 medium fennel bulb

salt and pepper to taste

1/4c. brown sugar

3 tbsp. of butter

real maple syrup




Directions:

  • preheat oven to 375 degrees F.

  • cut 3 pears into halves and 1 small fennel bulb into quarters

  • add the pears & fennel bulb quarters to a sheet pan with some olive oil drizzled over top with a pinch pf salt and pepper

  • pop into the hot oven for 45 minutes until caramelized and tender

while your veggies are roasting...


candied pecans

  • take a small saucepan on low heat and 3 tbsp. of butter

  • add 3 tbsp. maple syrup and 1/4c. of brown sugar to the pan and stir until the mixture starts to bubble and caramelize .

  • add the pecans to the mixture and stir them around until they are covered in the brown sugar mixture.

  • pour them onto wax paper and place into the fridge to cool down.

plating it!

  • cut the radicchio in half

  • blanch them for less than a minute, then put into a ice water bath to stop the cooking process.

  • I am just looking to freshen up the color

  • take the 3 bottom leaves of the radicchio and make them into a bowl on your salad plates.

  • take your caramelized pears and do 3-4 thin slices and lay them onto the radicchio bowls

  • add 1 fennel quarter to each bowl

  • top with your favorite micro greens, I happen to like the rainbow mix.

  • top with a few nice chunks of the greyer cheese

  • candied pecans

I am very sure that a nice tangy blue cheese or goat cheese would be great on this warm salad.(they happen to be some of my favorite cheeses).

I also like the taste of the vegan feta, its very creamy and light. I did decide to go with some soft gorgonzola cheese crumbles. With any of the cheeses I mentioned they would all be delicious!

You could top with a really beautiful blue or gorgonzola cheese dressing as well, I thought a light drizzle of maple syrup would be great with this.
